Vegan Nachos

Nachos are a favourite for parties, lazy nights in and shared meals with friends. This is an easy recipe made with mixed beans, creamy cheese sauce and a range of fillings that you have on hand. You can make it with a baking tray, skill or cake ring if you want a higher, more layered stack.

Ingredients for the filling
  • 1 tsp olive oil
  • 70g red or brown onion, diced (approximately 1/2 an onion)
  • 70g red or green capsicum (approximately 1/2 red capsicum), diced
  • 2 tsp Mingle Smokey Spice Blend
  • 1/2 tsp smoked paprika
  • 1/2 tsp ground cumin
  • 1/4 tsp salt
  • 1/4 tsp pepper
  • 130g four bean mix or tinned beans of choice
  • 400g tinned tomatoes

Ingredients for the extras
  • 500g corn chips
  • 150g shredded vegan cheese
  • 1 avocado, sliced or smashed
  • Fresh coriander, chives, green onion, lime and jalapeno, to taste

Instructions for the filling
  • Preheat oven to approximately 180 degrees Celsius and set aside a skillet, baking tray or cake ring.
  • Heat oil in a frying pan over a medium heat for 30 seconds.
  • Add onion and capsicum and cook for 2 minutes.
  • Add spice blend, paprika, cumin, salt and pepper, and cook for 5 minutes, stirring regularly.
  • Add beans and tomato and cook for a final 5-10 minutes.
Instructions for the cheese sauce
  • Meanwhile, combine sauce mix and milk in a bowl and mix until smooth, using a whisk or handheld blender.
Instructions for the extras
  • Layer chips, bean mix and cheese sauce on the baking tray, using the cake ring to keep it together if desired. I like to layer 3-4 times to get an even spread of ingredients.
  • Top with vegan cheese and bake for approximately 10-20 minutes.
  • Remove from the oven, top with avocado, coriander, chives and jalapeno, to taste.
