5 Ingredient Vegan: Raspberry Pastries


  • 2 sheets vegan puff pastry (approximately 400g)
  • 300g raspberries, fresh or frozen
  • 4 tbs + 2 tsp caster sugar
  • 1/4 lemon, juice and rind
  • Flaked almonds, to taste

  • Preheat oven to approximately 190 degrees Celsius.
  • Cut puff pastry into 8 pieces (4 pieces per sheet) and place on a baking tray lined with baking paper.
  • Place raspberries, 4 tbs sugar and lemon into a saucepan and cook over a medium heat until a thick mixture forms. 
  • Spread mixture evenly onto pasty, leaving a border around the outside (a minimum of 1cm).
  • Fold the sides of the pastry to make a square border and press down.
    Sprinkle with almonds and extra sugar and place in the oven.
  • Cook for approximately 15 minutes, or until pastry starts to brown.
  • Leave to cool and serve with vegan ice-cream.
