Vegan Marble Loaf

I love chocolate cake and I love vanilla cake, so I decided to combine them to create my Marble Loaf! It's very easy to whip up, and the recipe includes instructions on how to make a sticky, chocolate glaze that perfectly complements the moist, mild loaf. Vegan, freezer-friendly and ideal for a picnic, morning tea or celebration.

Ingredients for the vanilla cake
  • 200ml soy milk, or vegan milk of choice
  • 10ml apple cider vinegar
  • 200g self-raising flour
  • 140g caster sugar
  • 1 tsp baking powder
  • 1/4 tsp bicarbonate of soda
  • 1/4 tsp salt
  • 80ml vegetable oil
  • 1 tsp vanilla extract
Ingredients for the chocolate cake
  • 200ml soy milk, or vegan milk of choice
  • 10ml apple cider vinegar
  • 200g self-raising flour
  • 140g caster sugar
  • 30g cocoa powder
  • 1/2 tbs coffee powder
  • 1 tsp baking powder
  • 1/4 tsp bicarbonate of soda
  • 1/4 tsp salt
  • 80ml vegetable oil
Ingredients for the glaze
  • 2 tbs glucose, warm
  • 1 tbs soy milk, or vegan milk of choice
  • 1.5 tbs cocoa powder
  • 1/2 tbs brown sugar

Instructions for the vanilla cake
  • Preheat oven to approximately 180 degrees Celsius and grease a large loaf tin.
  • Combine milk and vinegar in a large jug and set aside for 10 minutes.
  • In a large bowl, combine flour, sugar, baking powder, soda and salt.
  • Slowly add wet ingredients, alternating between milk, oil and vanilla.
Instructions for the chocolate cake
  • Preheat oven to approximately 180 degrees Celsius and grease a large loaf tin.
  • Combine milk and vinegar in a large jug and set aside for 10 minutes.
  • In a large bowl, combine flour, sugar, cocoa, coffee, baking powder, soda and salt.
  • Slowly add wet ingredients, alternating between milk and oil.
  • Once mixture is combined, spoon in vanilla and chocolate batter, alternating to ensure the mixture is marbled.
  • Cook for approximately 45 minutes to 1 hour, or until the top starts to brown and an inserted knife comes out clean.
  • Remove from the oven and leave to cool for 30 minutes, then turn onto a cooling rack and leave to cool completely.
Instructions for the glaze
  • Combine all ingredients in a bowl and mix until smooth.
  • Drizzle over cool cake, cut into pieces and serve.
