5 Ingredient Vegan: Raspberry Pastries
2 sheets vegan puff pastry (approximately 400g)
300g raspberries, fresh or frozen
4 tbs + 2 tsp caster sugar
1/4 lemon, juice and rind
Flaked almonds, to taste
Preheat oven to approximately 190 degrees Celsius.
Cut puff pastry into 8 pieces (4 pieces per sheet) and place on a baking tray lined with baking paper.
Place raspberries, 4 tbs sugar and lemon into a saucepan and cook over a medium heat until a thick mixture forms.
Spread mixture evenly onto pasty, leaving a border around the outside (a minimum of 1cm).
Fold the sides of the pastry to make a square border and press down.
Sprinkle with almonds and extra sugar and place in the oven.
for approximately 15 minutes, or until pastry starts to brown.
Leave to cool and serve with vegan ice-cream.
